Fresh Strawberry Pie

When strawberry season starts my favourite pie to make is a fresh strawberry pie in a shortbread crust! So quick to whip up and it is delicious!!


Shortbread Crust

1 cup flour (I use Howick light spelt)

⅓ cup butter

2 tablespoons powdered sugar

In a mixing bowl mix together until crumbly, with no pieces bigger than a pea. Press into a 9 inch pie pan. Bake in preheated oven at 425F until golden. 10 mins. Cool. 

Meanwhile make filling. 

Mix in a pot:

 ½ cup honey

1 cup strawberries, mashed

½ cup orange juice or water

Bring to a boil and thicken with 3-4 tbsp cornstarch mixed in a little water. Set aside to cool. 

When cooled fold in 4 cups whole strawberries and pour into baked shortbread crust. 

Chill for 3 hours in the fridge and ENJOY!!
